Tomato Soup

Tomato soup has a deep rich flavor that changes depending on the type of tomato you use. I cook the tomatoes with other vegetables and then blend them all together. INGREDIENTS 6 large Tomatoes

1 Cucumber 1 Zucchini 1 Green pepper

1⁄2 cup cilantro 1 tsp basil 3 tbsp apple cider vinegar

3 tbsp olive oil 2 tbsp honey 1⁄4 cup water 1 cup tomato juice

pinch of black pepper

1) Blend the tomatoes, tomato juice, water, honey, olive oil, apple cider vinegar, cilantro and basil in a blender or food processor until smooth.

2) Add the cucumber, zucchini, and green pepper to the blender and mix until smooth.

3) Add the black pepper and mix gently.

4) Place the mixture in the refrigerator for 4-6 hours.

5) Serve the tomato soup cold and enjoy!
