Sweet Potato Bread

This is a hearty bread that is a great accompaniment with baked chicken and a green salad. INGREDIENTS 1 cups of cooked sweet potatoes 1/2 cup coconut flour

3 eggs 3 tablespoons of coconut milk 1 teaspoon baking soda

juice of half a lemon

1) Preheat your oven to 350 degrees.

2) Grease and line a mini loaf tin with parchment paper, it should be big enough to hang over the sides so you can lift the bread up when it is baked.

3) Put the ingredients into your food processor or blender and pulse until well combined.

4) Spoon the mixture into the prepared tin, smooth over the top with a spoon. Bake for 40 minutes.

5) Cover the loaf with foil and bake for a further 20 minutes.

6) Remove from the oven and allow to cool before slicing.
