Squash Noodles

It was fun to learn that I could make noodles from fresh vegetables. I use squash, carrots, and jicama. is recipe uses zucchini that are easy to slice into thin strips and then steam gently. The recipe uses sesame oil, rice vinegar, scallions and fresh ginger to create an Asian flavor. INGREDIENTS 4-5 Zucchini

2 tablespoons Scallions 1 tbsp Toasted Sesame Oil

1 tbsp Rice vinegar 1⁄2 tbsp Honey 1 tbsp Fresh Ginger

1) Carefully slice the zucchini lengthwise in thin long slices

2) Gently lift the noodles into the steamer and steam for 5 minutes until they are soft but not too soft (they need to have texture).

3) Gently lift the zucchini noodles from the pot and rinse with cold water, drain and set aside.

4) In a bowl mix the scallions, honey, vinegar, ginger and sesame oil together to create the dressing.

5) Transfer noodles to big bowl, pour the dressing over noodles and toss well.

6) Serve warm
