Spinach Salad

Spinach comes in many varieties, each with a distinct flavor and different shade of green. Some have huge leaves, others much smaller leaves. Spinach can grow in a garden all year round if the weather is cool and combines well with almost any other greens. This recipe combines spinach with pears, red onions and cranberries for a lovely sweet but also tart flavor. INGREDIENTS 4 cups Fresh spinach 1 Red Onion 2 Pears 1⁄2 cup dried cranberries

1⁄2 cup olive oil 2 tbsp balsamic vinegar

2 tsps mustard 1 tsp honey 1⁄2 tsp salt Pinch of black pepper

1) Wash the spinach, remove the stems, and cut into small pieces.

2) Slice the onions and pears, then add combine them and the cranberries with the spinach in a large bowl.

3) Combine the olive oil, vinegar, mustard, honey, salt and pepper in a separate bowl to create a dressing.

4) Pour dressing over the spinach salad, and enjoy!
