South Indian Fish Curry

This delicious fish curry has the wonderful taste of coconut and Indian spices. It’s wonderful with cauliflower or potatoes and a salad. INGREDIENTS 1 pound Tilapia fillet 2 tbsp Fresh Ginger

5-7 Garlic Cloves 1 Onion 3-4 tbsp Coconut Oil 1 tsp Mustard Seeds

1⁄2 tsp Turmeric 1 tsp chile powder 3 tsp Tamarind paste

1) Clean the Tilapia and cut it into medium size chunks. Set the cut Tilapia aside.

2) Cut up the ginger and onions, and set them aside.

3) Put the coconut oil into a frying pan under medium heat.

4) Add the Tilapia, mustard seeds, turmeric, chile powder, and tamarind paste into the pan, and mix slightly until the fish is covered.

5) Cook the Tilapia over medium heat for about 10 minutes until the fish is thoroughly cooked.

6) Once cooked, remove the Tilapia from the frying pan and serve hot.

7) Enjoy!
