Roasted Vegetables with Eggplant

Eggplant combines well with vegetables. This is a hearty dish that combines sweet and white potatoes with carrots and onions. INGREDIENTS 1 eggplant 2 sweet potatoes

2 white potatoes

3 carrots 2 onions 1 head of garlic 1⁄2 cup olive oil 1⁄2 tsp salt 1⁄4 tsp black pepper 1⁄2 tsp Italian seasoning

1) Preheat oven to 400 degrees

2) Cut all the vegetables except the garlic into bite size chunks

3) Break the garlic into cloves but leave the skin on

4) Put into a large bowl

5) Sprinkle with olive oil and spices and toss well so all veges are covered with oil and spices

6) Put into large baking pan

7) Roast for 30 minutes or until all the vegetables are soft and the potatoes are golden brown

8) Serve hot out of the oven

9) Great with sh or chicken or with a hearty soup

10) Enjoy.
