Raisin Bread

The sweet potatoes and raisins in this bread ensure that it has a great texture and sweetness. We love to eat it for breakfast or any other time of day with jam. INGREDIENTS 1-2 sweet potatoes

1⁄2 cup coconut flour, sifted

3 eggs 1⁄4 cut coconut oil 1 teaspoon baking soda

1 tablespoon of lemon juice 2 teaspoons cinnamon

1 teaspoon vanilla 1⁄2 cup raisins

pinch of salt

1) Roast the sweet potatoes and mash them while they are hot.

2) Preheat your oven to 350 degrees

3) Grease a loaf pan with coconut oil

4) Blend all of the ingredients in a food processor except for the raisins and blend until they are all mixed together.

5) Carefully add the raisins.

6) Spoon the mixture into the loaf pan.

7) Bake for 40 minutes.

8) Cover the loaf with foil and bake for a further 20 minutes.

9) Remove from the oven and let cool for 1⁄2 hour or more before serving.
