Mushroom Soup

Mushroom soups are hearty and healing. I like to use a few different varieties for maximum flavor and health. INGREDIENTS 2 lbs mushrooms

4 carrots 1 onion 2 stalks celery 5 cups chicken or vegetable stock 1 cup water 1⁄2 tsp Italian spice mix

1 tsp salt 1⁄8 tsp black pepper

6 tbsp olive oil

1) Cut the vegetables into 1⁄4 inch slices.

2) Sauté the vegetables in a pot with olive oil for 10 minutes.

3) Add the Italian spice mix, salt and black pepper to the pot.

4) Cut the mushrooms into thin slices and add them to the sauté.

5) Let the ingredients and spices cook for 5 minutes.

6) Add the chicken stock and water.

7) Cook the ingredients, spices, and stock over a low flame for 30 minutes.

8) Place the cooked mixture into a blender and bend until smooth.

9) Serve warm and enjoy!
