Cucumber Salad

A summer salad that relies on fresh herbs to give it a strong identifiable flavor that can be a side dish with any meal. In this version, you control and change the flavor depending upon your choice of herbs. The flavors get stronger over a few days as the cucumber sits in the herbs. Depending upon the season and the herbs available, you can substitute the mint for 1⁄4 cup fresh (1) Dill with pepper and salt, (2) Cumin with a bit of turmeric, (3) Oregano with sage, or (4) Cilantro in this recipe. INGREDIENTS 2-3 cucumbers 1 tbsp. Aioli 1⁄4 cup fresh Mint 1) Cut cucumbers into slices

2) Mince the fresh herbs

3) Mix the fresh herbs and cucumbers together.

4) Add Aioli.

5) Serve chilled and enjoy!
