Coconut Date Bars

These bars are a wonderful treat. We take them with us when we go hiking or for long walks. We also keep a few bars with us in our bags so we can eat them on the way to or from work. INGREDIENTS 1 cup shredded coconut

5-6 fresh dates (chopped)

1⁄4 cup maple syrup 2 tablespoons coconut oil (unrefined) 1⁄2 teaspoon vanilla extract 1⁄2 cup dark chocolate chips 1⁄2 cup chopped walnuts or almonds (optional) *The “chocolate chips” have to be chocolate nibs made of pure cocoa with no additive.

1) Combine all of the ingredients except chocolate chips in large glass bowl

2) Mix until all ingredients are combined into dough like consistency

3) Add chocolate chips (can also add chopped walnuts or almonds)

4) Spoon onto baking dish and place in refrigerator for 2 hours

5) When cold cut into small squares

6) Enjoy!
