Beet, Cilantro, and Mint Salad

This been and mint salad is fresh and has a delicious herbal taste to it. We love to eat in on a warm day in summer.

INGREDIENTS 6 large cooked red beets

1⁄4 medium to large size red onion 2 tbsps fresh cilantro

2 tbsps fresh mint 1⁄2 tsp cumin 1⁄4 tsp turmeric 4 cups combination lettuce and spinach

1⁄4 cup olives 2 tbsps olive oil 1⁄4 tsp salt 1⁄4 tsp black pepper

1) Cut the beets into quarters and steam until soft (about 7-10 minutes)

2) Dice the onion into small pieces.

3) Cut the greens into small pieces.

4) Place the beets, onion, and greens into a salad bowl and toss.

5) Add the cilantro, mint, cumin, turmeric, and olives to the salad bowl and gently toss the ingredients.

6) Add the olive oil and toss well.

7) Serve and enjoy!
