Apricot Scones

These apricot scones are the perfect pastry to have for breakfast or dessert! The fresh apricot gives a sweet taste while the chopped almonds add a nutty and savory element.

Ingredients:

2 cups Almond Flour Tsp Vanilla Extract

Tsp Baking Soda 1 Egg

2 Tbsp Coconut Oil 3 Tbsp Honey

Chopped Apricot Chopped Almond

1) Preheat your oven to 350 F

2) Microwave the coconut oil just enough to melt it.

3) Mix all the ingredients by hand until combined

4) Place in the refrigerator for 10-15 minutes to make the dough firm

5) Take the dough and form the scone mixture into the shapes you desire. Place your scones onto an oiled baking sheet. (I make mine in triangular shapes)

6) Place in the preheated oven for approximately 10-12 minutes.

7) Once baked, let the scones cool in the pan.

7) Enjoy!
